This is an easy question for me because fried morning glory is one of my favorite Thai foods. The way you order it in Thai is “pad pak boong” with a strong accent on the last word.
I find that this is a difficult dish to order in Thai because my English accent makes it difficult for Thai people to understand sometimes. They often think that I’m ordering “pad pak moo,” which I’m definitely not because I don’t eat pork.
“Pak” means vegetables and “Boong (or bung)” means morning glory in Thai language. What makes it special to me is the garlic sauce that they fry the morning glory in.
The good restaurants prepare a thick brown garlic sauce that you can spoon over your rice and vegetables. It is really delicious. Try it with the squid for a light and healthy combination.
